Bypass mode is just not using the DLVR that is present on the current gen cpu's while CU-DIMMS are a new memory classification that simply means the memory module has a clock driver to improve signal integrity vs prior udimm/sodimm designs that lacked this component. You will want to use bypass mode when benching ARL on LN2, and CU-DIMMS will be all those shiny new DDR5 memory kits that are binned for mega high clocks. Also Sooooonhooooo numba 1 😎
